I was first introduced to Eggland’s Best eggs when I attended the FitBloggin‘ conference in Baltimore in 2011. Prior to that, I rarely ate whole eggs because I generally used a liquid egg substitute. After learning more about the nutrition benefits of Eggland’s Best vs. ordinary eggs (more than double the Omega-3, twice the Vitamin D, 25% less saturated fat, and more), they’ve since become a staple in my kitchen.
From now through February 15, 2013, Eggland’s Best is offering the Top 20 recipes from their “2012 Your Best Recipes” contest as an eCookbook. It contains fives recipes each in the categories of breakfast, appetizers, main course, and desserts. This eCookbook, a $9.99 value, is available for FREE to all of their Facebook fans. You can go here to like their Facebook page (if you don’t already) and then download the PDF eCookbook.
I downloaded a copy of the eCookbook a couple of days ago. After skimming through the recipes, I’ve found at least three recipes already that I definitely plan to try! Since each recipe contains a full-color photo, I thought I would share the pics of the ones I plan to try so you can see how yummy they look. From the breakfast category — Asparagus & Mushroom Quiche (8 PointsPlus on Weight Watchers):
From the main course category – Corn & Zucchini Flan (5 PointsPlus):
From the dessert category – Chocolate Hazelnut Espresso Cookies (3 PointsPlus):
Don’t they all look great? As you can see, the cookie recipe was the winner for the dessert category. That means even as tasty as the quiche and flan look, they weren’t even the winners in their respective categories!
For those like me on Weight Watchers, the PointsPlus values aren’t included on the recipes. However, all the nutritional information is included for every recipe. All I had to do was plug that information into my Weight Watchers Mobile app to calculate the values.
So, if you’re interested, be sure to head over and like their Facebook page and then go download the free eCookbook. As a reminder, the free download is only available until February 15, so don’t wait too long or you’ll miss out!
