Meatloaf is one of those recipes from my childhood that I still really love. That being said, it had been years since I actually made a meatloaf. It’s something I would normally order at a local diner instead of having to make one myself. Unfortunately, meatloaf from a diner isn’t usually very WW-friendly, so I started searching online for a healthier alternative I could make at home.
I ended up modifying/combining a couple of different meatloaf recipes I found on the Six Sisters Stuff website. One was for a pot-in-pot Instant Pot version of meatloaf. I really liked the ingredients it called for, but I don’t own one of the pan sets for doing pot-in-pot cooking in my IP. So, I combined the ingredients from that recipe with the oven cooking time and temperature from another recipe. The end result was a super tasty meatloaf that was easy to make and is definitely far more WW-friendly than a diner meatloaf.
I know a lot of people like a brown gravy with their meatloaf. I grew up in the South and it’s all about the tomato sauce topping there. This one was really easy to make because it started with condensed tomato soup. Here’s the entire recipe for you:
- 1 pound 96% lean ground beef
- 2 large eggs
- 1/2 medium onion chopped
- 1/4 cup ketchup
- 1 cup old fashioned oats
- 1 can condensed tomato soup divided
- 2 tbsp Worcestershire sauce divided
- 2 tbsp brown sugar
- Salt & pepper to taste
- Preheat oven to 350ºF.
- In a medium sized bowl, stir together the beef, eggs, onion, oatmeal, ketchup, salt and pepper, half of the soup, and 1 tbsp of the Worcestershire sauce. Mix gently with your hands until combined, but don’t overwork.
- Place mixture in a loaf pan and mold the loaf.
- In a small bowl, combine the brown sugar, the rest of Worcestershire sauce, and rest of the soup. Mix well then pour over the top of loaf.
- Bake 75 minutes or until the internal temperature reaches 155-160ºF.
Even though the recipe doesn’t call for it, you could easily add some bell peppers to it as well. I didn’t happen to have any on hand when I made this or I definitely would have put some in it. You could easily add some pureed veggies in the mix as well to bulk it up a bit more, too.
Once my meatloaf was done, I paired it with some Green Giant® Steamers Roasted Red Potatoes, Green Beans & Rosemary Butter Sauce. The entire meal came out to 9 SmartPoints on WW Freestyle.
